Veganism's underlying concept is to do no harm. If you eat vegan foods, you are not only doing "no harm," to all animals, you are eating the healthiest foods for your body, creating a smaller carbon footprint and stepping lightly on our planet. Yes, switching to a vegan diet is better for the earth than changing from a regular gas-engine car to a hybrid! Of course, being vegan means eating awesome, filling, and varied foods. Check them out!

She's here! The newest member of our family (a vegan since conception!) joined us on May 28th! Welcome, Veggie Baby! Luckily, Grandmas 1 and 2 came down to cook us awesome vegan meals and keep us well fed during the exhausting 1st few weeks. Now, Mr. PLV is cooking up Portabella BBQ sandwiches, pizzas, grilled corn, and yummy salads while I feed Veggie Baby. She likes to eat!! I keep up my own strength by noshing on homemade muffins from the freezer and lots of fresh fruits and veggies from the farmer's market. If you have any suggestions about what we can make for lunch or dinner during this crazy time of our lives (what is simple, nutritious, and fast?), leave a comment here. I hope to post again sometime soon! Happy early July 4th!

Congratulations! What a beautiful baby. And yay! to veggie babies and mommies. I'm 29 weeks pregnant and have been in the hospital on bed rest for 3 1/2 weeks. Hopefully we'll be here another 4 (a weird thing to wish for). The food situation is appalling--one veggie burger on offer and only two green vegetables, steamed broccoli or steamed green beans. I'm hoping the first 6 months of fresh veg and whole grains will buoy my baby boy for this last tough two months and when we get out--he gets all good stuff through veggie breast milk! I'll check back for lots of good cooking ideas then.
ReplyDeleteIn the meantime, my suggestions for easy cooking and eating with a new little one: lots of soup and lots of salad. Soups are so easy and you can fill them with grains and beans and veg and maybe splurge on the pre-cut veggies for a little while to save yourself some time. Good luck and all the best!
